Applesauce Cake Recipe

June 6 is National Applesauce Cake Day!  My mom used to make applesauce cake every once in a while.  It’s very moist.  Using applesauce in a recipe is a good way to cut down on the amount of fat.   Here’s a recipe for you to try out:

Ingredients:

  • 2 1/2 cups all purpose flour
  • 1 cup sugar
  • 1/4 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp salt
  • 3/4 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp allspice
  • 1/2 cup softened shortening
  • 1/2 cup water
  • 16 oz jar of applesauce
  • 1 large egg
  • 1/2 cup nuts, chopped
  • 1 cup raisins

Method:

  1. Mix together all the dry ingredients.
  2. Mix in wet ingredients and beat for 2 to 4 minutes.
  3. Mix in raisins and nuts.
  4. Pour batter into greased and floured 9×12 inch pan and bake at 350 degrees for 45 minutes.

Best served the next day.

Salsa Chicken

Salsa Chicken Slow Cooker Recipe

I love my slow cooker!  It makes getting dinner so easy.  One of my favorite recipes is Salsa Chicken.  Here is my recipe:

Ingredients:

Salsa Chicken

Salsa Chicken

1 14 ounce(ish) Jar of Salsa

3 to 4 pounds of Chicken pieces (legs, thighs, wings, breast)

Method:

1. Place the chicken pieces in your slow cooker.

2. Pour the entire jar of salsa over the chicken.

3. Turn on your slow cooker.  Chicken will be done in 4 to 5 hours on low or 3 hours on high.

To Serve:

Serve the chicken on top of rice (white or brown).  I like to take some of the salsa sauce from the slow cooker and pout it over the chicken and rice.  All you need is a salad to round out the meal!

When cooking in my slow cooker I like to use a slow cooker liner.  They make clean up super fast and easy.  You can find slow cooker liners at Amazon.com.
